Have your breakfasts sorted for the week with this great tasting recipe.
2 red onions, peeled and diced
3-4 cloves of garlic
6 peppers- colours of your choice
3 tins of tomatoes
1 Green chilli
2 tsp of cumin seeds
3 tsp of Paprika
½-1 tsp of cayenne (adapt to taste as it’s spicy)
Salt and pepper to taste
2-3 eggs for each day
In a large casserole dish (on a low to medium heat) add a few good glugs of olive oil and add the cumin seeds. Toast until the aroma is released but be careful not to burn.
Add the onions and garlic and cook until soft.
Slice the peppers, dice the aubergine and courgettes, and add to the dish. Cook for another 10-15 mins or so until the veg has all softened. Add the spices and tins of tomatoes and cook until it all reduces. Taste and add salt and pepper. If you want it to be spicier then add more cayenne pepper or a pinch of sugar if you want it to be sweeter.
Once the mixture has cooled, put into a tub ready for the week.
Ready for breakfast
Take 2-3 large spoons of the mixture and add to a frying pan to warm through. In the mixture make 2-3 wells to crack your eggs into. Top the eggs with cracked black pepper and place under the grill to finish off.
