Food, easy banana pancakes
Prep Time:- 5 minutes
Cooking Time:- 2 and a haf minutes per pancake
This recipe makes:- 4 x 15-20cm pancakes (serves 2 people)
2 ripe Bananas
1stp ground cinnamon
Fork, Mixing bowl, frying pan, Whisk, Pallet knife or spatula
Peel the bananas and place in a mixing bowl then mash to a smooth paste using the back of a fork. Once you have mashed the bananas to a suitable texture, crack the eggs and add to the banana paste along with the cinnamon. Wisk all the ingredients together until they are well mixed and there is no lumps on cinnamon.
Heat a frying pan and add and some coconut oil. Ladle some of the mixture into the frying pan and cook for about 1 and half minutes or until the underside is lightly browned. Flip the pancake over using a pallet knife and cook for a further minute.
Why not put a couple of rashers of bacon between the pancakes to make an awesome breakfast. If you want something a bit fresher and with more fruit then team them up with mixed berries and a dollop of Greek yogurt. Or if you want to get some extra protein in you after a gym session, add a couple of scoops of chocolate protein powder to the mix before cooking to them an extra kick.
