5th Christmas Tip- Breakfast
Christmas dinner takes the main stage come the 25th but we should still break the fast and have something in the morning. Just because you have going to have a big dinner or lunch doesn’t mean you shouldn’t have something to start the day.
Food over the holiday period is often heavy so change things up and treat yourself to something a little bit special, but something that you’ll feel bad for having. My go to favourite for this time of year is avocado, smoked salmon, scrambled eggs on rye bread.
Take your rye bread or toast, layer slices of avocado, cover with a few slices of smoked salmon then take your eggs and place them on top finishing with a little bit of lemon juice to give it that zing. If you want to spice things up a little mash the avocado and add fresh chilli, which is great for you as it contains a chemical called capsaicin, which is responsible for the intense heat sensation. Capsaicin lowers blood sugar levels, improves heart health, boosts circulation and heals intestinal problems.
How to make the perfect scrambled eggs
Crack eggs into a mixing bowl, I prefer to you organic free range eggs but it’s not critical. Add a pinch of salt and pepper, then lightly whisk with a fork until the white and yolk are mixed together. Once the eggs are mixed put them to one side and heat a pan with some butter until it melts, be careful not to have this on a too high heat as we don’t want to burn the butter. Next add your eggs and leave on a low heat for 10-15 seconds. Then with a wooden spoon gently stir the mixture, bringing the cooked egg to the top. Repeat this process until all the egg is nearly cooked and remove from the heat. The eggs will carry on cooking as a result of their own heat which is why we remove them just before they are done.
